So I brought around 750 grams of saucisson (dry cured sausage) from Paris, and currently am wonderinf how to properly store them. If properly cured then refrigeration is not required. It is best to keep cool though since fat will weep even if it's cured, plus also makes it easier to slice.

Do you need to cook saucisson?
As far as I know, it has been pre-cooked, but you should heat it up in hot water. Don't let the water boil, as then the sausage will burst. Very tasty when warm, never tried it cold but tend to think it would not be recommended.
